Ingredients

  • 1 cup green or brown lentils
  • 1 cup fresh flat-leaf parsley, finely chopped
  • 2 medium ripe tomatoes, diced
  • 1 medium cucumber, diced
  • Juice of 2 lemons
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a pot, combine lentils and 3 cups of water. Boil over medium heat, then reduce to low, cover, and simmer for 20-25 minutes until tender. Drain excess water and let cool.
  2. While lentils cool, chop parsley, tomatoes, and cucumber.
  3. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  4. In a large bowl, combine cooled lentils with chopped vegetables and dressing. Toss gently to mix.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Serve chilled or at room temperature; garnish with extra parsley if desired.
