  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 tbsp extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta cheese

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes.
  2. Set grill to medium-high heat or preheat oven to 400°F (200°C).
  3. Remove chicken from marinade (discard leftover marinade). Grill for about 6-7 minutes per side or bake for 25-30 minutes until juices run clear.
  4. While chicken cooks, dice cucumber and halve cherry tomatoes.
  5. Slice cooked chicken and layer over cucumbers and tomatoes in bowls.
  6. Sprinkle with feta cheese and drizzle with additional olive oil or lemon juice before serving.
