  • 1 lb large shrimp, peeled and deveined
  • 1 can (7 oz) chipotle peppers in adobo sauce
  • 1 cup brown rice
  • 2 cups water
  • 1 cup bell peppers, diced (mix of colors)
  • 1 cup corn (fresh or frozen)
  • 1 small red onion, thinly sliced
  • 2 tbsp lime juice (freshly squeezed)
  • 1 avocado, sliced (for topping)
  • ¼ cup fresh cilantro, chopped (for topping)

Instructions

  1. Prepare ingredients: Rinse shrimp if frozen and pat dry. Chop bell peppers, red onion, and cilantro; set aside.
  2. Cook rice: In a medium pot, combine brown rice and water. Bring to boil, reduce heat, cover, and simmer for about 40-45 minutes until tender.
  3. Marinate shrimp: Mix chopped chipotle peppers with lime juice in a bowl. Toss in shrimp until well coated and let marinate while rice cooks.
  4. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add red onion and bell peppers; sauté for about five minutes until softened. Stir in corn and cook for another couple of minutes.
  5. Cook shrimp: Add marinated shrimp to the skillet and sauté until pink and opaque—about three to four minutes.
  6. Assemble bowls: Layer cooked brown rice at the bottom of each bowl. Top with the shrimp mixture, avocado slices, and fresh cilantro.
