Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce (minced)
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 2 limes
  • 6 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes (halved)
  • 1 ripe avocado (diced)
  • 1/2 cup Greek yogurt
  • 1 tbsp honey

Instructions

  1. Marinate the chicken by mixing chipotle peppers, olive oil, lime juice, cilantro, salt, and pepper in a bowl. Add chicken and marinate for at least 30 minutes.
  2. Cook the chicken on a preheated grill or skillet over medium-high heat for about 6-7 minutes per side until fully cooked (165°F internal temperature).
  3. While the chicken cooks, prepare mixed greens, slice cherry tomatoes, and dice avocado.
  4. In a small bowl, mix Greek yogurt with honey and lime juice until smooth; season with salt to taste.
  5. Once cooked, let the chicken rest before slicing it into strips. Toss mixed greens with tomatoes and avocado in a large bowl.
  6. Add sliced chicken and drizzle with dressing; toss gently to combine.
