Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 chipotle peppers in adobo sauce, diced
  • 1 cup light lager or ale
  • 1/4 cup brown sugar
  • 1 cup ketchup
  • 1 tsp garlic powder
  • 4 ears fresh corn on the cob
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat grill to medium-high heat (375°F or 190°C).
  2. In a bowl, mix diced chipotle peppers, beer, brown sugar, ketchup, and garlic powder to create the marinade. Coat chicken breasts generously and let marinate for at least one hour.
  3. Grill corn directly on grates for 10-15 minutes until tender and slightly charred. Turn occasionally.
  4. Grill marinated chicken on direct heat for about 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Brush with additional marinade during cooking.
  5. Cut kernels off grilled corn into a bowl; stir in butter, salt, pepper, and a splash of cream if desired.
  6. Serve grilled chicken with creamed corn and drizzle remaining sauce over the top.
