  • 1 lb large shrimp, peeled and deveined
  • 1 cup shelled edamame
  • 2 cups green cabbage, shredded
  • 1 cup purple cabbage, shredded
  • 1 cup carrots, shredded
  • 4 green onions, chopped
  • 2 tbsp Sriracha (adjust for heat)
  • 3 tbsp rice vinegar
  • 2 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Rinse the shrimp if frozen and pat dry.
  2. In a skillet over medium heat, add oil and cook the shrimp for 3-4 minutes until pink and opaque. Remove from heat.
  3. Whisk together Sriracha, rice vinegar, sesame oil, salt, and pepper in a small bowl to make the dressing.
  4. In a large bowl, mix the cabbage, carrots, edamame, and green onions. Drizzle with dressing and toss well.
  5. Layer the slaw mixture in serving bowls and top with cooked shrimp.
  6. Serve immediately or store leftovers in an airtight container.
