  • 3 medium waxy potatoes, boiled
  • 2 medium carrots, peeled and diced
  • 4 sour pickles, diced
  • 1 cup frozen green peas
  • 3 hard-boiled eggs, chopped
  • 1 cup cooked chicken breast, chopped (or substitute ham/turkey)
  • 1 cup mayonnaise (or yogurt for a lighter option)
  • 1 handful fresh dill or parsley, chopped

Instructions

  1. Boil potatoes and carrots in salted water until tender but firm (15-20 minutes). Drain and let cool before dicing.
  2. Hard boil the eggs by placing them in cold water, bringing it to a boil, then covering and letting sit for 10 minutes. Cool under cold water.
  3. Chop cooled potatoes, carrots, pickles, eggs, and chicken into small cubes. Combine in a large bowl with green peas.
  4. Add mayonnaise and herbs; mix gently until well combined. Season with salt and pepper to taste.
  5. Mold the mixture into a circular wreath shape on a serving platter.
  6. Chill in the fridge for at least one hour before serving. Garnish with additional herbs or colorful veggies if desired.
