Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions (typically a 1:1 water-to-rice ratio). Allow to cool in a bowl.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooled rice using a wooden spatula.
  3. Slice the fresh fish into thin pieces, about 1/2 inch thick.
  4. Wet your hands with water and shape approximately two tablespoons of rice into an oval mound.
  5. Top each rice mound with a slice of fish, adding wasabi between if desired.
  6. Serve on a platter with soy sauce for dipping.
