  • 2 cups short-grain sushi rice
  • 1/2 cup seasoned rice vinegar
  • 8 oz sushi-grade salmon or tuna, sliced into thin strips
  • 1 cup cucumber, thinly sliced
  • 1 ripe avocado, thinly sliced
  • 2 tbsp sugar (for seasoning rice)
  • Toasted sesame seeds (for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions with a pinch of salt.
  2. Combine warm cooked rice with seasoned rice vinegar and sugar; let cool slightly.
  3. Layer half of the sushi rice in a mold, followed by layers of fish and vegetables, then top with remaining rice. Press gently.
  4. Cover with plastic wrap and place something heavy on top. Chill for about 30 minutes.
  5. Remove from mold and slice into squares using a sharp knife dipped in water. Garnish with toasted sesame seeds before serving.
