  • 1/4 cup unsweetened shredded coconut (optional)

Instructions

  1. Wash all ingredients thoroughly. Peel and seed the papaya, then cut it into bite-sized chunks. Dice the cucumber and red bell pepper into similar-sized pieces.
  2. In a large bowl, combine the papaya chunks, cucumber slices, diced red bell pepper, and thinly sliced red onion. Toss gently to avoid mashing the veggies.
  3. Drizzle fresh lime juice over the salad mixture. Add chopped cilantro and mix until well combined.
  4. If desired, stir in shredded coconut for added tropical flair.
  5. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes to enhance flavors.
