  • 1 lb boneless skinless chicken thighs (about 4 pieces)
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 sheet puff pastry (store-bought)
  • 1 medium onion, diced
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut chicken thighs into bite-sized pieces and season with salt, pepper, and oregano.
  2. In a large skillet, heat olive oil over medium heat. Sauté the seasoned chicken until browned (5-7 minutes), then set aside.
  3. In the same skillet, add diced onion and sauté until translucent. Stir in chopped spinach until wilted (about 2 minutes).
  4. Return the chicken to the skillet, add crumbled feta and lemon juice, mixing well. Allow to cool slightly.
  5. Roll out puff pastry on a floured surface and line a greased baking dish with it. Pour in the chicken mixture and cover with another pastry sheet, sealing edges.
  6. Cut slits in the top for steam to escape, brush with an egg wash (beaten egg mixed with water), and bake for 30-35 minutes or until golden brown.
