  • 1 lb boneless chicken thighs
  • 1 cup basmati rice, rinsed
  • 1 medium eggplant, diced
  • 1 cup cauliflower florets
  • 2 medium tomatoes, sliced
  • 2 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp cardamom
  • 3 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients by washing and chopping the vegetables.
  2. In a bowl, mix salt, pepper, cinnamon, allspice, and cardamom. Coat the chicken thighs with this spice mixture.
  3. Heat olive oil in a large pot over medium heat. Sauté eggplant and cauliflower until golden brown (about 5 minutes).
  4. Push veggies aside and brown chicken thighs on both sides (about 8 minutes).
  5. Layer sautéed vegetables over the chicken, add sliced tomatoes, then sprinkle with rinsed rice.
  6. Pour in chicken broth until everything is submerged. Cover and reduce heat to low; simmer for 30-40 minutes until liquid is absorbed and rice is fluffy.
  7. Let it rest for a few minutes before flipping onto a serving platter.
