  • 1 cup dried cannellini or navy beans (soaked overnight)
  • 2 tbsp extra virgin olive oil
  • 1 medium onion (chopped)
  • 4 garlic cloves (minced)
  • 2 medium carrots (sliced)
  • 1 stalk celery (diced)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Soak the beans in water overnight. Drain and rinse before using.
  2. In a large pot over medium heat, warm the olive oil. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic for another minute.
