  • 1 cup sushi rice
  • 1 cup water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 4 oz fresh sashimi-grade fish (salmon or tuna)
  • 1 sheet nori (seaweed), cut into strips
  • 1/2 cucumber, thinly sliced
  • 1 avocado, sliced

Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook with 1 cup of water in a rice cooker or saucepan according to instructions.
  2. After cooking, transfer the rice to a bowl and mix in the rice vinegar, sugar, and salt until well combined.
  3. While the rice cools, slice the sashimi-grade fish, cucumber, and avocado.
  4. In serving bowls, place a scoop of seasoned rice at the bottom. Artfully arrange fish, cucumber, and avocado on top.
  5. Garnish with nori strips and optional sesame seeds or pickled ginger before serving.
