  • 300g pork belly, sliced
  • 2 tbsp white or red miso paste
  • 200g daikon radish, thinly sliced
  • 100g carrots, thinly sliced
  • 4 green onions, chopped
  • 200g firm tofu, cubed
  • 4 cups dashi stock (or water)
  • 1 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté the pork belly until crispy on the edges (about 5 minutes).
  2. Add daikon radish and carrots to the pot. Cook for another 5 minutes until slightly softened.
  3. Pour in dashi stock and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
  4. In a small bowl, mix miso paste with a ladle of hot broth until smooth. Stir this mixture back into the pot and simmer for another 5 minutes.
  5. Gently add tofu and chopped green onions just before serving, warming through without boiling.
