Chawanmushi, a traditional Japanese savory egg custard, offers a comforting blend of silky texture and umami flavors. Steamed to perfection, this dish is perfect for cozy family dinners or impressing guests.

  • 4 large eggs
  • 2 cups dashi stock (homemade or instant)
  • 1 tbsp soy sauce (low-sodium recommended)
  • 1 tbsp mirin
  • 2 chopped green onions
  • 4 prawns (peeled and deveined)
  • 1/2 cup shiitake mushrooms (sliced)

Instructions

  1. Prepare dashi stock according to package instructions if using instant.
  2. In a large bowl, whisk the eggs gently until smooth; avoid creating bubbles.
  3. Stir in dashi stock, soy sauce, and mirin until fully combined.
  4. Strain the mixture through a fine sieve into another bowl for ultra-smooth custard.
  5. Divide the egg mixture into small cups or ramekins; add prawns and shiitake mushrooms on top.
  6. Steam cups in a steamer basket over simmering water for 15-20 minutes until set but still slightly wobbly in the center.
  7. Allow to cool slightly before serving, garnished with chopped green onions.
