Instructions
Prepare dashi stock according to package instructions if using instant.
In a large bowl, whisk the eggs gently until smooth; avoid creating bubbles.
Stir in dashi stock, soy sauce, and mirin until fully combined.
Strain the mixture through a fine sieve into another bowl for ultra-smooth custard.
Divide the egg mixture into small cups or ramekins; add prawns and shiitake mushrooms on top.
Steam cups in a steamer basket over simmering water for 15-20 minutes until set but still slightly wobbly in the center.
