  • 1 lb lean ground beef
  • 1/2 lb Italian sausage (sweet or spicy)
  • 1 cup plain breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 small onion, chopped
  • 6 cups chicken broth
  • 1 cup Acini di Pepe pasta
  • 1 large egg
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine ground beef, Italian sausage, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Form into small meatballs (about 1 inch).
  2. Heat olive oil in a large pot over medium heat. Sauté onions, carrots, and celery until softened (about 5 minutes).
  3. Pour in chicken broth and bring to a simmer. Add meatballs and cook until they float (about 10 minutes).
  4. Stir in pasta and cook per package instructions (about 7 minutes) until al dente.
  5. Add fresh spinach and let wilt for about 2 minutes.
  6. Remove from heat before serving hot with additional Parmesan cheese on top.
