  • 1 cup mixed nuts (walnuts, pecans, almonds)
  • 1 cup cooked lentils (green or brown)
  • 1 cup breadcrumbs (whole wheat or gluten-free)
  • 2 tbsp fresh thyme
  • 2 tbsp fresh rosemary
  • 1 cup low-sodium vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  2. In a skillet over medium heat, heat olive oil and sauté chopped onion and minced garlic until soft, about 5 minutes.
  3. In a large bowl, combine cooked lentils, mixed nuts, breadcrumbs, sautéed mixture, fresh herbs, and vegetable broth. Mix until well combined.
  4. Transfer the mixture to the loaf pan and press down firmly.
  5. Bake for about 45 minutes or until firm and golden brown on top.
  6. Let it cool slightly before slicing. Serve warm with vegan gravy or roasted vegetables.
