  • 3 large bell peppers (red, yellow, or green)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 can (15 oz) diced tomatoes, drained
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • ½ cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and remove seeds; place them upright in a baking dish.
  2. In a saucepan, combine quinoa and broth. Bring to a boil, then reduce heat and simmer covered for about 15 minutes until fluffy.
  3. In a skillet over medium heat, sauté onion in olive oil until soft. Add garlic and cook until fragrant.
  4. In a bowl, mix cooked quinoa with sautéed onions, diced tomatoes, cumin, salt, pepper, and half of the cheese.
  5. Stuff each pepper with the quinoa mixture and top with remaining cheese.
  6. Cover the dish with foil and bake for 25 minutes. Remove foil in the last five minutes to melt cheese.
