Strawberry Matcha Sago is a vibrant and refreshing dessert that combines chewy sago pearls with creamy coconut milk, juicy strawberries, and earthy matcha. This eye-catching dish is not only a feast for the eyes but also a delightful explosion of flavors in every spoonful.

  • 1/2 cup small sago pearls
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup fresh strawberries, sliced
  • 1 tbsp high-quality matcha powder
  • 2 tbsp sweetener (sugar or honey)
  • Fresh mint leaves for garnish

Instructions

  1. Rinse sago pearls under cold water until the water runs clear.
  2. In a pot, boil 2 cups of water; add rinsed sago pearls and cook for 10-15 minutes until transparent.
  3. Strain cooked sago pearls under cold running water.
  4. In another saucepan, warm the coconut milk with your chosen sweetener over low heat.
  5. Dissolve matcha powder in a small amount of hot water; stir into the coconut milk mixture.
  6. In serving bowls, layer cooked sago with sliced strawberries; pour matcha coconut milk over it.
  7. Garnish with mint leaves and enjoy.
