  • ¾ cup fresh strawberries, chopped
  • 1 cup powdered sugar (for frosting)
  • ½ cup unsalted butter, softened (for frosting)
  • 2 tbsp heavy cream or milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream together the softened butter and sugar until fluffy.
  4. Add eggs one at a time to the butter mixture, mixing well after each addition; then mix in vanilla.
  5. Gradually add dry ingredients to the wet mixture while alternating with milk. Fold in chopped strawberries.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely before frosting with a mixture of powdered sugar, butter, and cream.
