  • 1 cup granulated sugar
  • 1 ½ tsp baking powder

  • ½ cup unsalted butter, softened

  • 1 cup fresh raspberries
  • For Frosting: 1 cup powdered sugar (sifted)
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually combine the dry ingredients with the wet mixture until just combined. Gently fold in the raspberries.
  5. Pour the batter into prepared cupcake liners, filling them halfway. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with the cream cheese mixture.
