  • 1 cup granulated sugar
  • 1 ½ cups all-purpose flour

  • ½ cup fresh lemon juice (about 23 lemons)
  • Zest of 2 lemons
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, mix melted butter and granulated sugar until smooth. Stir in flour until combined; press into the bottom of an ungreased baking dish.
  2. Bake crust for 15-20 minutes until lightly golden brown. Allow to cool slightly.
  3. In another bowl, whisk together lemon juice, zest, sugar, eggs, and remaining flour until well blended.
  4. Pour the lemon mixture over the cooled crust evenly.
  5. Bake again for 20-25 minutes until set in the center.
  6. Cool completely before cutting into chick shapes or squares; dust with powdered sugar before serving.
