  • 2 cups granulated sugar
  • 1 cup water
  • 1 package (1.75 oz) pectin

Instructions

  1. Wash lemons thoroughly, zest using a microplane, and juice until you have 1 cup of juice.
  2. In a large pot, combine lemon juice, sugar, and water; heat over medium until sugar dissolves.
  3. Stir in pectin when the mixture begins to bubble; whisk continuously until thickened.
  4. Cook for an additional 10-15 minutes until it coats the back of a spoon.
  5. Pour hot jam into sterilized jars with half an inch of headspace and seal tightly.
  6. Allow to cool at room temperature before storing in the refrigerator or pantry for at least 24 hours.
