Ingredients

  • 1/2 cup dried hijiki seaweed
  • 1 medium carrot, grated
  • 1/2 cucumber, thinly sliced
  • 2 tablespoons toasted sesame oil
  • 3 tablespoons unseasoned rice vinegar
  • Salt and pepper to taste
  • 2 tablespoons toasted sesame seeds for topping

Instructions

  1. Rinse hijiki seaweed under cold water and soak in warm water for 20 minutes until expanded. Drain.
  2. While soaking, grate the carrot and slice the cucumber.
  3. In a small bowl, whisk together sesame oil, rice vinegar, salt, and pepper.
  4. In a mixing bowl, combine hijiki seaweed, carrot, cucumber, and dressing; toss gently to coat.
  5. Top with toasted sesame seeds and chill in the refrigerator for 15-30 minutes before serving.
