  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup pineapple juice
  • 1 cup bell peppers, sliced (mix of colors)
  • 4 green onions, sliced
  • 2 cups cooked rice (white or brown)

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, whisk together soy sauce, pineapple juice, garlic, and ginger.
  4. Marinate chicken in the mixture for at least 30 minutes.
  5. Place marinated chicken in the baking dish and pour remaining marinade over it. Bake for 25-30 minutes until cooked through (internal temp of 165°F).
  6. While chicken bakes, prepare bell peppers and green onions.
