  • 2 ripe avocados, diced
  • 1 ripe mango, diced
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1/2 cup water
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together lime juice, olive oil, salt, and pepper. Marinate the salmon fillets for at least 15 minutes.
  2. Prepare the avocado-mango salsa by combining diced avocados, mangoes, chopped red onion, cilantro, lime juice, salt, and pepper in a medium bowl.
  3. Rinse jasmine rice until water runs clear. Cook in a saucepan with coconut milk and water; bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
  4. Preheat grill to medium-high heat. Grill marinated salmon skin-side down for about 6 minutes per side or until it flakes easily.
  5. Serve coconut rice as the base on plates topped with grilled salmon and generous scoops of salsa.
