  1. Rinse the spinach under cold water and bring a large pot of water to a boil.
  2. Blanch the spinach for 1 minute until vibrant green. Drain and rinse under cold water.
  3. Squeeze out excess water from the spinach using your hands or a kitchen towel.
  4. In a mixing bowl, combine toasted sesame seeds, soy sauce, brown sugar, and mirin. Whisk until smooth.
  5. Toss the drained spinach in the sesame sauce until well coated.
  6. Serve on a platter or in bowls, garnished with additional sesame seeds if desired.
