  • 4 cups chopped green cabbage
  • 2 medium Yukon Gold potatoes, diced (about 2 cups)
  • 1 cup sliced carrots
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. 1. Wash and chop all vegetables: cabbage into bite-sized pieces, potatoes into cubes, carrots thinly sliced, and onion and garlic finely chopped.
  2. 2. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (approximately 5 minutes).
  3. 3. Add minced garlic and sliced carrots to the pot; stir for another three minutes until fragrant.
  4. 4. Incorporate cabbage and potatoes into the pot. Pour in vegetable broth to cover by about an inch.
  5. 5. Season with thyme and bay leaf. Bring to a gentle boil, then reduce heat and simmer for 25-30 minutes until all vegetables are tender.
  6. 6. Remove from heat, discard bay leaves, adjust seasoning with salt and pepper as desired. Serve hot with crusty bread.
