  • 3 ripe bananas (mashed)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup Icelandic yogurt or sour cream
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour
  • 1 cup of your favorite ice cream (softened)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in granulated sugar, brown sugar, eggs, vanilla extract, and yogurt until well combined.
  4. In a separate bowl, combine flour, baking soda, and salt. Gradually add this dry mix to the banana mixture while stirring gently.
  5. Pour half of the batter into the prepared loaf pan. Layer with softened ice cream, then top with remaining batter.
  6. Bake for about 60 minutes or until a toothpick comes out clean. Cool in the pan for ten minutes before transferring to a wire rack.
