  • 2 medium-sized sweet potatoes (about 500g)
  • 1 cup canned black beans, drained and rinsed (240g)
  • 1 cup corn (fresh or frozen) (160g)
  • 1 red bell pepper, diced (150g)
  • 1 avocado, sliced
  • 2 tbsp fresh lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and place them on a baking sheet lined with parchment paper. Bake for about 45 minutes until tender.
  3. While the sweet potatoes are baking, sauté the diced red bell pepper in a skillet over medium heat until soft, about 5 minutes.
  4. Add black beans and corn to the skillet, mixing well and heating through for another 3–4 minutes.
  5. Squeeze lime juice into the mixture and season with salt and pepper to taste.
  6. Once the sweet potatoes are done, slice them open lengthwise without cutting all the way through. Fluff the insides with a fork.
  7. Generously spoon in the filling and top with avocado slices before serving.
