  • 4 cups low-sodium vegetable broth
  • 200g firm tofu, pressed and cubed
  • 2 green onions, chopped
  • 2 tbsp white miso paste
  • 2 tbsp soy sauce
  • 1 tbsp cooking oil (for frying tofu)
  • 1 sheet nori, cut into strips (for garnish)

Instructions

  1. Prepare the udon noodles according to package instructions. If using frozen noodles, cook until tender.
  2. In a non-stick skillet over medium-high heat, add the cooking oil and fry the pressed tofu cubes until golden brown on all sides (8-10 minutes).
  3. In a large pot, combine vegetable broth, miso paste, and soy sauce. Bring to a gentle simmer while stirring until well combined.
  4. Add the cooked udon noodles to the broth and let them soak up the flavors for about five minutes.
  5. Serve the noodles in bowls topped with crispy tofu cubes and chopped green onions. Garnish with nori strips.
