  • 1/2 cup green onions, chopped
  • 1 medium red bell pepper, diced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • Lettuce leaves (e.g., butter or romaine)

Instructions

  1. 1. Wash and chop the vegetables: dice the red bell pepper, slice the green onions thinly, and mince the garlic.
  2. 2. In a skillet over medium-high heat, add oil and cook chicken breasts until golden brown and cooked through (about 6 minutes per side). Remove from heat and let rest.
  3. 3. Shred the chicken using two forks once it has rested for a few minutes.
  4. 4. In a bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, and half of the green onions.
