  • 1 cup short-grain sushi rice
  • 2 sheets nori
  • 1/2 cup sliced cucumber
  • 1/2 avocado, sliced
  • 1/2 cup shredded carrots
  • 1/2 cup cooked shrimp or grilled chicken
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp mayonnaise (optional)

Instructions

  1. Rinse sushi rice under cold water until clear and cook according to package instructions. Let cool slightly.
  2. Slice vegetables and protein into bite-sized pieces.
  3. Place a nori sheet shiny side down on a clean surface; add half a cup of cooled sushi rice in the center and flatten into a square.
  4. Layer vegetables and protein on top of the rice; drizzle with soy sauce and add mayonnaise if desired.
  5. Fold nori sides over the filling to create an envelope shape; wrap tightly.
  6. Slice diagonally for easy eating; serve immediately or pack for later.
