  • 4 medium zucchinis
  • 1 lb ground beef or turkey
  • 1 medium onion, chopped

  • 1 cup bell peppers, diced (any color)
  • 2 tbsp taco seasoning
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each zucchini in half lengthwise and scoop out the flesh to create 'boats.' Set aside the scooped flesh.
  3. In a skillet over medium heat, cook ground beef (or turkey), onion, garlic, and bell peppers until meat is browned and vegetables are tender (about 7-10 minutes).
  4. Stir in taco seasoning and reserved zucchini flesh; cook for an additional few minutes.
  5. Spoon the filling into each zucchini half and top with shredded cheese.
  6. Place filled zucchinis on a baking sheet and bake for 25-30 minutes until bubbly and golden.
