  • 1 lb lean ground turkey
  • 4 cups romaine lettuce, chopped
  • 4 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 4 hard-boiled eggs, quartered
  • ½ cup blue cheese crumbles
  • ¼ cup dressing of choice (vinaigrette or ranch)

Instructions

  1. Cook the ground turkey in a skillet over medium heat until browned. Season with salt and pepper.
  2. In another pan, cook the bacon until crispy. Drain excess grease and chop.
  3. While the turkey and bacon cook, rinse and chop romaine lettuce. Halve cherry tomatoes and slice avocado.
  4. Hard-boil eggs by placing them in cold water, bringing to a boil, covering, then letting sit for nine minutes before cooling in ice water.
  5. In meal prep containers or bowls, layer romaine as the base; top with turkey, bacon bits, tomatoes, avocado, blue cheese, and eggs.
  6. Drizzle with dressing before serving or storing.
