  • 2 cups elbow macaroni (cooked al dente)
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 stalk celery (chopped)
  • 1 cup bell peppers (diced; red and green mix)
  • ½ red onion (finely chopped)
  • 2 hard-boiled eggs (chopped)
  • 2 tbsp Dijon mustard
  • Salt & pepper (to taste)

Instructions

  1. Cook the elbow macaroni in salted boiling water until al dente (about 8 minutes). Drain and rinse under cold water.
  2. While the pasta cools, chop the celery, bell peppers, red onion, and hard-boiled eggs.
  3. In a large bowl, mix the cooked macaroni with mayonnaise, sour cream, Dijon mustard, salt, and pepper.
  4. Add the chopped vegetables and eggs to the bowl and gently fold everything together.
  5. Cover and chill in the refrigerator for at least an hour to allow flavors to meld.
  6. Serve chilled and enjoy!
