  • 1 lb white fish fillets (cod or tilapia)
  • 2 tbsp taco seasoning
  • 4 cups romaine lettuce, chopped
  • 1 cup pico de gallo (fresh tomatoes, onions, cilantro, lime juice)
  • 1 ripe avocado, sliced
  • ½ cup low-fat sour cream or Greek yogurt
  • 1 tbsp lime juice

Instructions

  1. Preheat oven to 400°F (200°C). Pat dry the fish fillets and rub taco seasoning generously on both sides.
  2. Place seasoned fish on a parchment-lined baking sheet. Bake for 12-15 minutes until flaky.
  3. While the fish bakes, prepare the pico de gallo and slice the avocado.
  4. In large bowls, layer chopped lettuce as the base. Flake baked fish on top and add pico de gallo and avocado slices.
