  • 1 can (15 oz) black beans, drained
  • 1 cup quinoa, rinsed
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 cup bell peppers, chopped (any color)
  • 1 cup rolled oats
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Rinse quinoa under cold water; combine with 2 cups water in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  2. In a skillet over medium heat, add 1 tbsp olive oil. Sauté onions and bell peppers for about 5 minutes; add garlic and cook for an additional minute.
  3. In a large bowl, mash black beans until mostly smooth but still chunky.
  4. Mix in cooked quinoa, sautéed veggies, oats, cumin, paprika, salt, and pepper until well combined.
  5. Form mixture into patties about half an inch thick; you should have around 6 patties.
  6. Heat remaining olive oil in the skillet over medium-high heat. Cook patties for about 5 minutes on each side until golden brown.
