  • 4 cups fresh green peas (or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1/4 cup fresh mint leaves, chopped
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: 1/2 cup sour cream or yogurt for garnish

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the diced onion and sauté until translucent (about 5 minutes). Stir in the minced garlic and cook until fragrant (about 1 minute).
  2. Add the green peas to the pot and cook for an additional 5 minutes.
  3. Pour in the vegetable broth until it just covers the peas. Bring to a gentle simmer and cook for about 10 minutes.
  4. Use an immersion blender to puree the soup until smooth. For added texture, leave some peas whole.
  5. Stir in chopped mint and lemon juice; season with salt and pepper to taste.
  6. Serve hot or chill before serving. Garnish with sour cream or yogurt if desired.
