  • 1/2 cup white miso paste
  • 1/4 cup sake
  • 1/4 cup brown sugar
  • 2 tbsp mirin

Instructions

  1. In a bowl, whisk together the miso paste, sake, mirin, and brown sugar until smooth.
  2. Place the black cod fillets in a shallow dish and pour the marinade over them. Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
  3. Preheat your oven to 400°F (200°C).
  4. Line a baking sheet with parchment paper. Remove excess marinade from the fillets and place them on the prepared baking sheet.
  5. Bake for 12-15 minutes until glazed and cooked through.
