  • 2 cups ripe Roma tomatoes, diced
  • 1 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 4 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the baguette into half-inch thick pieces and arrange on a baking sheet. Brush both sides lightly with olive oil. Toast in the oven for 5-7 minutes until golden brown.
  2. In a bowl, combine diced tomatoes, chopped basil, minced garlic, balsamic vinegar (if using), and 2 tablespoons of olive oil. Season with salt and pepper; let sit for 10 minutes.
