  • 4 boneless, skinless chicken breasts (1 lb)
  • 4 cups green cabbage, thinly sliced
  • 1 cup carrots, julienned or grated
  • ½ cup fresh cilantro, chopped
  • 2 tbsp toasted sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp honey (optional)
  • 1 clove garlic, minced

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for about 6 minutes on each side until golden brown and cooked through. Allow to rest before slicing.
  2. While the chicken cooks, prepare the cabbage, carrots, and cilantro.
  3. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey (if using), and garlic until smooth.
  4. In a large bowl, combine cabbage, carrots, sliced chicken, and half of the dressing. Toss gently to mix.
  5. Serve in bowls, drizzling additional dressing on top if desired and garnish with extra cilantro.
