  • 1 cup canned black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 2 tsp olive oil
  • Salsa (for serving)

Instructions

  1. Preheat a non-stick skillet over medium heat.
  2. On a clean surface, place one tortilla; layer half of the black beans and half of the shredded cheese on one half.
  3. Fold the tortilla in half to create a pocket.
  4. Add 1 tsp of olive oil to the heated skillet and place the quesadilla in the pan. Cook for 3-4 minutes until golden brown, then flip and repeat on the other side.
  5. Transfer to a cutting board, slice into wedges, and serve warm with salsa.
