  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese (divided)
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute). Add fresh spinach and cook until wilted (about 3 minutes).
  3. In a bowl, mix sautéed spinach with heavy cream, half of the Parmesan cheese, salt, and pepper.
  4. Spread the spinach mixture evenly in the baking dish and create wells for the eggs. Crack each egg into its own well and sprinkle with remaining Parmesan.
  5. Bake for 15-20 minutes or until egg whites are set but yolks remain slightly runny.
