  • 1 cup whole milk (or almond/oat milk)
  • 1/2 cup pumpkin puree
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • For the filling: 4 oz softened cream cheese, 2 tbsp powdered sugar

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, pumpkin puree, cinnamon, and salt until smooth. Let the batter rest for 30 minutes.
  2. Preheat a non-stick skillet over medium heat and lightly grease it with butter or cooking spray.
  3. Pour about half a cup of batter into the pan and swirl to spread evenly. Cook for approximately 2 minutes or until golden brown.
  4. Flip the crepe and cook for an additional minute until golden on both sides.
  5. Transfer to a plate, fill with the cream cheese mixture, roll up, and serve warm.
