  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup creamy or chunky peanut butter
  • ¾ cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, then press firmly into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth. Gradually add sugar, followed by peanut butter and vanilla; mix until fully combined.
  3. Add eggs one at a time on low speed until just blended. Pour filling over the crust and smooth the top.
  4. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Turn off oven and leave cheesecake inside for an hour.
  5. Cool on a wire rack, then refrigerate for at least four hours before serving.
