Ingredients

Scale
  • 4 bone-in chicken thighs (about 1.5 lbs)
  • 1 cup Burgundy or Pinot Noir
  • 4 slices thick-cut bacon
  • 8 oz fresh button mushrooms
  • 1 cup pearl onions
  • 2 cups low-sodium chicken stock
  • 3 cloves garlic, minced
  • 4 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the bacon and gathering everything for efficiency.
  2. In a large Dutch oven over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels while reserving the fat.
  3. Season chicken thighs with salt and pepper, then brown in the bacon fat for about five minutes per side until golden brown.
  4. Add pearl onions and mushrooms to the pot; sauté for five minutes until fragrant.
  5. Pour in red wine and chicken stock, scraping up any bits stuck to the bottom. Add garlic, thyme, and return bacon to the pot.
  6. Bring to a gentle simmer, cover, and cook on low heat for about an hour until chicken is fork-tender.
