  • 2 pounds Russet or Yukon Gold potatoes
  • 1 cup Gouda cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Parmesan cheese, freshly grated
  • 2 cups heavy cream
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. Peel (if desired) and slice the potatoes into 1/8-inch rounds.
  3. In a saucepan over medium heat, melt butter. Add garlic and sauté until fragrant. Stir in heavy cream and cheeses until smooth.
  4. Layer half of the potato slices in the greased dish; season with salt and pepper. Pour half of the cheese sauce over them.
  5. Repeat with remaining potatoes and top with the rest of the cheese sauce.
  6. Cover with foil and bake for 45 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
