  • 1 deep pie crust (homemade or store-bought)
  • 1 can (15 oz) pure pumpkin puree
  • 3/4 cup light brown sugar
  • 1 cup heavy cream
  • 3 large eggs
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Preheat oven to 375°F (190°C). Fit the pie crust into a greased pie dish and poke holes in the bottom.
  2. In a bowl, mix pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, ginger, and heavy cream until smooth. Pour into the prepared crust.
  3. Bake for about 30 minutes until edges are set but center jiggles slightly.
  4. While baking, whisk together remaining eggs with heavy cream and spices in a separate bowl.
  5. Once cooled slightly, pour custard mixture over the pumpkin layer. Return to oven for another 20-25 minutes until set.
